We found this recipe in Parade Magazine, and it’s a keeper! This take on beet soup (or Russian borscht) is packed with nutrient-dense ingredients, and offers healthy fats from olive oil and avocado as well as vegetables that promote detox, curb inflammation, and boost the immune system.

In addition, it’s so simple to make! Just toss all the ingredients into a blender and puree… presto! Done.

You can serve this soup cold, or blend it in a high-speed blender until it’s hot (these blenders are great for creating fast and nutritious soup from simple, fresh ingredients). If you don’t own a high-speed blender, you can warm it on the stove in a saucepan (don’t bring it to a boil).
